  1. In a food processor or blender, add cottage cheese, fresh garlic cloves, grated parmesan cheese, salt, black pepper, and red pepper flakes, if using. Blend on high speed for about 30-60 seconds until smooth.
  2. With the blender running, gradually pour in 1/4 to 1/2 cup of reserved pasta water and continue blending until the sauce reaches your desired consistency.
  3. Transfer the creamy sauce into a medium saucepan set over medium-low heat. Stir frequently for about 3-5 minutes until warm.
  4. Once the sauce is heated through, add in your cooked pasta and gently toss until well coated.
