Step-by-Step Instructions
  1. Preheat a skillet over medium heat. Add whole garlic cloves and roast for about 5 minutes, turning frequently, until golden brown and fragrant.
  2. Chop the chipotle peppers finely using a sharp knife.
  3. In a blender, combine sour cream, mayonnaise, chopped chipotle peppers, roasted garlic, fresh lime juice, smoked paprika, cumin, and salt. Blend until smooth.
  4. Taste and adjust heat or coolness by adding more chipotle or sour cream.
  5. If too thick, blend in olive oil or water gradually for desired consistency.
  6. Transfer sauce to an airtight container. Refrigerate for at least 30 minutes before serving.
