Step-by-Step Instructions for Creamy Carrot Potato Soup
  1. Melt 2 tablespoons of butter or heat olive oil in a large pot over medium heat. Add diced onion and a pinch of salt and pepper, then sauté for about 5 minutes.
  2. Incorporate minced garlic and diced celery, cook for an additional minute. Add chopped carrots and diced potatoes along with herbs, salt, and pepper.
  3. Pour in 600ml of vegetable broth, increase heat to high and bring to a boil. Reduce heat and let it simmer for 20 minutes.
  4. Remove from heat, cool slightly and blend about a cup of the soup until smooth.
  5. Return blended portion to pot, stir, and adjust seasoning. Stir in chopped parsley, serve hot.
