Step-by-Step Instructions
  1. In a large pot, heat over medium-high and add your Cajun sausage, cooking for about 5–7 minutes until golden brown and fragrant. Remove the sausage and set aside.
  2. Lower the heat to medium and add the butter. Once melted, whisk in the flour for about 2 minutes until smooth and slightly bubbly.
  3. Gradually pour in the chicken broth while stirring constantly. Slowly add the half-and-half, mixing until fully incorporated. Bring to a gentle boil.
  4. Add the onion flakes, garlic powder, cumin, chili powder, Cajun seasoning, and smoked paprika. Stir well for about 1 minute to bloom the spices.
  5. Stir in the cooked sausage, shredded chicken, drained red beans, corn, and green chilies. Mix thoroughly and let simmer for about 10–12 minutes.
  6. Remove from heat and stir in the shredded pepper jack cheese.
