- In a large pot, heat over medium-high and add your Cajun sausage, cooking for about 5–7 minutes until golden brown and fragrant. Remove the sausage and set aside.
- Lower the heat to medium and add the butter. Once melted, whisk in the flour for about 2 minutes until smooth and slightly bubbly.
- Gradually pour in the chicken broth while stirring constantly. Slowly add the half-and-half, mixing until fully incorporated. Bring to a gentle boil.
- Add the onion flakes, garlic powder, cumin, chili powder, Cajun seasoning, and smoked paprika. Stir well for about 1 minute to bloom the spices.
- Stir in the cooked sausage, shredded chicken, drained red beans, corn, and green chilies. Mix thoroughly and let simmer for about 10–12 minutes.
- Remove from heat and stir in the shredded pepper jack cheese.
