Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. Cook the orzo in salted boiling water for 2 minutes less than package instructions, then rinse with cold water.

  4. Fold in halved cherry tomatoes and cook for 3-4 minutes.
  5. Add fresh spinach and cook for about 2 minutes until wilted, seasoning with salt and pepper.
  6. Stir in the cooked orzo, Boursin cheese, Parmesan, mozzarella, and broth until well combined.
  7. Transfer to a greased baking dish and cover with aluminum foil.
  8. Bake for 25 minutes, then uncover and bake for an additional 10-15 minutes until golden.
