Method
 

Cookie Preparation
  1. In a large mixing bowl, cream together the softened unsalted butter and granulated sugar until light and fluffy, about 3-4 minutes.
  2. Add the all-purpose flour and salt, mixing on low speed until combined but not overmixed.
  3. Fold in the chopped pistachios and dried cranberries until evenly distributed.
  4. Portion the dough into balls and place on a baking sheet lined with parchment paper, flattening each into a disk shape.
  5. Preheat the oven to 350°F (175°C) and bake for 10-12 minutes until lightly golden around the edges.
  6. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Decoration
  1. If desired, sprinkle cooled cookies with powdered sugar or drizzle with melted chocolate for added elegance.
