Step-by-Step Instructions
  1. Preheat your oven to 325°F (160°C).
  2. Season the beef roast generously with salt and pepper on all sides.
  3. Heat olive oil in a large pot over medium-high heat and sear the beef roast on all sides for about 4 minutes until golden brown.
  4. Remove the beef and sauté diced onions and minced garlic in the same pot for about 5 minutes until the onions are translucent.
  5. Deglaze the pot with balsamic vinegar, scraping up browned bits, and simmer for a couple of minutes.
  6. Stir in cranberries, beef broth, and honey or maple syrup, and let simmer for about 5 minutes.
  7. Return the beef to the pot and cover it with the sauce before roasting in the oven for 3 to 3.5 hours.
  8. Once cooked, let the roast rest for about 10 minutes before slicing and serving.
