Preparation Steps
  1. Brown the sausage in a large pot over medium-high heat for about 5-6 minutes, breaking it into bite-sized pieces. Remove the sausage and leave the drippings.
  2. In the same pot, melt butter over medium heat, add diced onion and sauté for 3-4 minutes until translucent.
  3. Stir in minced garlic and cook for an additional minute until aromatic.
  4. Pour in the broth and water, add sliced potatoes, salt, pepper, and red pepper flakes. Bring to a rolling boil.
  5. Reduce to a simmer, cover the pot, and cook potatoes for 12-15 minutes until fork-tender.
  6. Fold in the chopped kale and cook for 2-3 minutes until wilted.
  7. Gradually stir in the cream, being careful not to bring back to a boil.
  8. Add the cooked sausage back and adjust seasoning. Let everything meld together before serving, garnished with bacon and Parmesan.
