- In a food processor, combine the cottage cheese, maple syrup, vanilla extract, and melted coconut oil. Blend until smooth and creamy.
- In a separate mixing bowl, whisk together the almond flour, baking soda, and salt. Include protein powder if using.
- Pour the wet mixture into the dry ingredients and gently fold together until just combined.
- Add in the chocolate chips and any optional ingredients, folding gently to distribute.
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop 1-tablespoon-sized balls of dough onto the baking sheet.
- Bake for 10-12 minutes or until edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
