Method
 

Directions
  1. In a food processor, combine the cottage cheese, maple syrup, vanilla extract, and melted coconut oil. Blend until smooth and creamy.
  2. In a separate mixing bowl, whisk together the almond flour, baking soda, and salt. Include protein powder if using.
  3. Pour the wet mixture into the dry ingredients and gently fold together until just combined.
  4. Add in the chocolate chips and any optional ingredients, folding gently to distribute.
  5. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper. Scoop 1-tablespoon-sized balls of dough onto the baking sheet.
  6. Bake for 10-12 minutes or until edges are golden brown. Allow to cool on the baking sheet for 5 minutes before transferring to a wire rack.
