  • 1/4 cup Maple Syrup or Honey optional
  • 1 tsp Vanilla Extract
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1/4 tsp Salt

  • 1/2 cup Chopped Walnuts or Pecans
  • 1/2 cup Shredded Coconut
  • 1/2 cup Raisins

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare an 8x8-inch baking dish by lining it with parchment paper or lightly greasing it.
  2. In a large mixing bowl, combine the cottage cheese, eggs, maple syrup or honey, and vanilla extract. Whisk until smooth, then gently fold in the almond flour, baking powder, cinnamon, salt, and grated carrot.
  3. Pour the batter into the prepared dish and smooth the top. Bake for 25–30 minutes until set and lightly golden.
  4. Remove from oven and let cool in the pan for at least 10 minutes before slicing into squares.
