- Preheat your oven to 350°F (175°C).
- In a medium skillet, heat about 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, stirring occasionally for 3–4 minutes until soft.
- Stir in the chopped fresh spinach, cooking for an additional 2–3 minutes until wilted. Season with garlic powder, salt, and pepper, then remove from heat and let cool.
- In a large bowl, whisk together 6 large eggs, 1 cup of milk, and 1 cup of cottage cheese until smooth. Add 1 teaspoon of Italian seasoning and season with salt and pepper.
- Gently fold the cooled vegetable mixture and 1 cup of shredded cheese into the egg mix.
- Grease a 9-inch pie dish with olive oil, pour the mixture in, and spread evenly.
- Bake for 40–45 minutes until golden brown and set in the center.
- Allow to cool for 5–10 minutes before slicing. Serve warm or at room temperature.
