Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C).
  2. In a medium skillet, heat about 1 tablespoon of olive oil over medium heat. Add the diced onion and bell pepper, stirring occasionally for 3–4 minutes until soft.
  3. Stir in the chopped fresh spinach, cooking for an additional 2–3 minutes until wilted. Season with garlic powder, salt, and pepper, then remove from heat and let cool.
  4. In a large bowl, whisk together 6 large eggs, 1 cup of milk, and 1 cup of cottage cheese until smooth. Add 1 teaspoon of Italian seasoning and season with salt and pepper.
  5. Gently fold the cooled vegetable mixture and 1 cup of shredded cheese into the egg mix.
  6. Grease a 9-inch pie dish with olive oil, pour the mixture in, and spread evenly.
  7. Bake for 40–45 minutes until golden brown and set in the center.
  8. Allow to cool for 5–10 minutes before slicing. Serve warm or at room temperature.
