Step-by-Step Instructions
  1. Cut chicken breast halves into 1-inch pieces, season with garlic powder, salt, and pepper, then coat in flour.
  2. Heat 2 tablespoons of olive oil in a deep skillet over medium-high heat, then brown half the seasoned chicken pieces for about 3 minutes per side.
  3. Cook remaining chicken in the skillet, browning for about 3-4 minutes per side, then set aside with the first batch.
  4. Reduce heat and add another tablespoon of olive oil and a tablespoon of butter, then sauté sliced cremini mushrooms and chopped onion for 6–8 minutes.
  5. Stir in Dijon mustard, Worcestershire sauce, and optional minced garlic, sauté for 1 minute.
  6. Pour in the chicken broth, scrape browned bits from the skillet, return chicken, and simmer for about 2 minutes.
  7. Reduce heat and stir in full-fat sour cream until smooth, season with salt and pepper to taste.
