Ingredients
  

Pasta Salad
  • 8 oz Vegetable Pasta black bean pasta optional
  • 1 cup Chopped Carrots can swap with diced bell peppers
  • 1 cup Chopped English Cucumber can peel if using regular cucumbers
  • ¼ cup Chopped English Cucumber for garnish
  • 1 cup Halved Cherry Tomatoes grape tomatoes can be used
  • 8 oz Fresh Mozzarella Pearls drained
  • ¼ cup Chopped Fresh Basil can use parsley instead
  • 2 tbsp Chopped Fresh Parsley can omit or increase basil
  • 1 tsp Granulated Garlic or minced fresh garlic
  • ¼ cup Balsamic Vinegar apple cider or red wine vinegar can be alternatives
  • ½ cup Extra Virgin Olive Oil or another salad oil

Method
 

Preparation Steps
  1. Bring a large pot of salted water to a rolling boil. Add the vegetable pasta and cook per package instructions (8-10 minutes) until al dente.
  2. Add chopped carrots to the boiling water three minutes after the pasta starts cooking. Cook until tender but crisp, then remove from heat.
  3. While pasta and carrots cook, chop half the cucumber into small dice; carve the other half into jack-o'-lantern shapes for garnish.
  4. In a large bowl, combine diced cucumber, halved cherry tomatoes, chopped basil, parsley, and drained mozzarella. Toss gently.
  5. Drain pasta and carrots, rinse under cold water. This stops cooking.
  6. Add cooled pasta and carrots to the bowl with veggies. Drizzle with balsamic vinegar and olive oil, then sprinkle granulated garlic. Toss to coat.
  7. Garnish with carved cucumber jack-o'-lanterns and serve cold or at room temperature.
