For the Sauce
  • 3 tbsp Soy Sauce Use tamari for gluten-free.
  • 1 medium Shallot Can swap with a regular onion.

  • 2 cloves Garlic Fresh minced is ideal.
  • 1 can Coconut Milk Full-fat or light can be used.
  • 1 tbsp Maple Syrup Agave syrup is an acceptable substitute.
  • 1 tsp Paprika Smoked paprika adds extra flavor.
  • 2 tbsp Lime Juice Freshly squeezed gives the best results.
  • 2 tbsp Cilantro Parsley is a suitable alternative.

Method
 

Step‑by‑Step Instructions for Coconut Lime Tofu
  1. Cook 1½ cups of jasmine rice according to the package directions, keeping it warm.
  2. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  3. Press and cube the extra firm tofu, toss with avocado oil, soy sauce, and cornstarch.
  4. Spread tofu on the baking sheet and bake for 20 minutes, flipping halfway through.
  5. Sauté chopped shallot, ginger, and minced garlic in avocado oil until fragrant.
  6. Stir in coconut milk, soy sauce, maple syrup, and paprika; simmer for 3 to 5 minutes.
  7. Gently fold in baked tofu and squeeze fresh lime juice over the top.
  8. Serve over warm rice and garnish with chopped cilantro.
