Ingredients
  

For the Eggplant
  • 2 large Eggplant Can substitute with zucchini.
  • 1 tablespoon Salt For drawing out moisture.
For the Breading
  • 1 cup All-purpose flour Use gluten-free blend for a gluten-free option.
  • 2 large Eggs Or almond milk for a vegan alternative.
  • 2 cups Homemade breadcrumbs Can replace with store-bought.
  • 1 cup Parmesan cheese Nutritional yeast for a vegan twist.
  • 1 tablespoon Italian herb blend
  • 1 teaspoon Garlic powder
  • 1 teaspoon Salt & black pepper To taste.
For the Assembly
  • 2 cups Marinara sauce Homemade or high-quality jar.
  • 2 cups Mozzarella cheese Fresh mozzarella is recommended.
  • 1/4 cup Fresh basil & oregano For garnish.

Method
 

Step-by-Step Instructions
  1. Slice the eggplant into 1/4 to 1/2 inch thick rounds. Sprinkle generously with salt and let sweat for 10 minutes.
  2. Preheat the oven to 350°F. Toast bread until golden brown, then process into crumbs. Combine breadcrumbs with garlic powder, salt, pepper, Parmesan, and Italian herbs.
  3. Set up a breading station with flour, whisked eggs, and breadcrumb mixture. Dredge eggplant slices in flour, dip in egg, and coat with breadcrumbs.
  4. Bake breaded slices on an oiled baking sheet for 25 minutes, or fry in olive oil for 2-3 minutes per side until golden brown.
  5. In a baking dish, layer marinara sauce, cooked eggplant, mozzarella, and more marinara. Repeat layering until all eggplant is used, topping with mozzarella and Parmesan.
  6. Increase oven temperature to 400°F. Cover with foil and bake for 30 minutes, then remove foil and bake for another 10 minutes until cheese is melted and golden.
  7. Let rest for 5-10 minutes before serving. Garnish with basil and oregano.
