- Slice the eggplant into 1/4 to 1/2 inch thick rounds. Sprinkle generously with salt and let sweat for 10 minutes.
- Preheat the oven to 350°F. Toast bread until golden brown, then process into crumbs. Combine breadcrumbs with garlic powder, salt, pepper, Parmesan, and Italian herbs.
- Set up a breading station with flour, whisked eggs, and breadcrumb mixture. Dredge eggplant slices in flour, dip in egg, and coat with breadcrumbs.
- Bake breaded slices on an oiled baking sheet for 25 minutes, or fry in olive oil for 2-3 minutes per side until golden brown.
- In a baking dish, layer marinara sauce, cooked eggplant, mozzarella, and more marinara. Repeat layering until all eggplant is used, topping with mozzarella and Parmesan.
- Increase oven temperature to 400°F. Cover with foil and bake for 30 minutes, then remove foil and bake for another 10 minutes until cheese is melted and golden.
