Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
  2. In a medium mixing bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the unsalted butter, granulated sugar, and vanilla extract using an electric mixer.
  4. Incorporate the eggs into the creamed mixture one at a time.
  5. Gradually add half of the flour mixture and half of the milk, alternating between the two.
  6. In a separate bowl, mix together the chopped apples, light brown sugar, and ground cinnamon.
  7. Layer half of the batter into the prepared loaf pan, followed by half of the apple mixture. Repeat with the remaining batter and apple mixture.
  8. Sprinkle a mixture of cinnamon and sugar over the top before baking.
  9. Bake for 45-55 minutes or until a toothpick comes out clean.
  10. Let cool for 15-20 minutes before removing from the pan and glazing if desired.
