Preparation
- Preheat your oven to 350°F (175°C) and grease an 8.5 x 4.5 inch loaf pan.
- In a medium mixing bowl, whisk together the flour, baking powder, and salt.
- In a large bowl, cream together the unsalted butter, granulated sugar, and vanilla extract using an electric mixer.
- Incorporate the eggs into the creamed mixture one at a time.
- Gradually add half of the flour mixture and half of the milk, alternating between the two.
- In a separate bowl, mix together the chopped apples, light brown sugar, and ground cinnamon.
- Layer half of the batter into the prepared loaf pan, followed by half of the apple mixture. Repeat with the remaining batter and apple mixture.
- Sprinkle a mixture of cinnamon and sugar over the top before baking.
- Bake for 45-55 minutes or until a toothpick comes out clean.
- Let cool for 15-20 minutes before removing from the pan and glazing if desired.
