Chipotle Shrimp & Salmon
  • 1 pound Shrimp peeled and deveined
  • 1 pound Salmon fillets
  • 2 tablespoons Chipotle in adobo for seasoning

  • 2 cups Pico de gallo fresh salsa
  • 1 cup Pineapple salsa sweet and tangy
  • 2 cups Lettuce shredded

Method
 

Marinating and Preparation
  1. Marinate chicken breasts for Pollo Asado at least 24 hours prior with lime juice, garlic, cumin, and oregano. Cover and refrigerate.
  2. One day before, chop toppings and store in airtight containers to meld flavors.
  3. Grill marinated chicken on medium-high heat for 6-7 minutes per side until cooked through. Rest before slicing.
  4. Cook diced potatoes in a skillet, covered, for 10 minutes. Add chorizo and onions, cooking until crispy.
  5. Sear shrimp and salmon in a skillet for 2-3 minutes per side until cooked thoroughly.
  6. Assemble taco bar with tortillas and toppings for guests to create their masterpieces.
