- Preheat your oven to 400°F (200°C). Prepare your baking dish.
- Combine honey, chipotle chili powder, olive oil, garlic powder, salt, and black pepper in a large bowl for the marinade. Add the chicken thighs and let marinate for at least 15 minutes.
- Bring a pot of salted water to a boil. Add peeled and chopped russet potatoes and cook for 15-20 minutes until fork-tender.
- Drain the potatoes, return to pot over low heat, add milk, unsalted butter, and smoked gouda cheese. Mash until smooth.
- Transfer the marinated chicken thighs to a baking dish, skin-side up. Bake for 25-30 minutes until golden brown and internal temp reaches 165°F (75°C).
- Remove the chicken from the oven, plate with the mashed potatoes and drizzle pan juices over the chicken.
