Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and line two large baking sheets with parchment paper.
  2. Whisk together all-purpose flour, baking powder, baking soda, cornstarch, and kosher salt.
  3. Cream the butter, brown sugar, and granulated sugar on medium speed until light and fluffy.
  4. Incorporate the eggs one at a time, and add vanilla extract until combined.
  5. Gradually mix dry ingredients into wet ingredients until just combined.
  6. Fold in the chocolate chips evenly throughout the dough.
  7. Drop mounds of cookie dough onto the prepared baking sheets, spaced about 2 inches apart.
  8. Take a teaspoon of marshmallow fluff and place it on half of the flattened cookie disks; seal with another disk.
  9. Bake for 13-14 minutes until edges are golden brown.
  10. Cool the cookies on baking sheets for a few minutes before transferring to a wire rack.
