Step-by-Step Instructions
  1. Heat a large oven-safe skillet over medium heat for about 2 minutes. Spray with cooking spray to prevent sticking.
  2. Add ground beef and diced onion to the skillet. Cook for 8-10 minutes until browned and onion is tender.
  3. Stir in taco seasoning and salsa. Cook for another 2-3 minutes until fragrant.
  4. Add drained black beans, sweet corn, and diced tomatoes. Simmer for 5-6 minutes until liquids reduce slightly.
  5. Mix in the prepared rice until fully combined. Top with shredded Colby Jack cheese.
  6. Broil the skillet in the oven for about 1 minute until cheese bubbles and turns golden brown.
  7. Garnish with fresh cilantro and other desired toppings. Serve warm and enjoy!
