For the Pasta
  • 8 ounces Spiral Pasta or any pasta like rotini
For the Sauce
  • 1 cup Heavy Cream keep at room temperature
  • 1 cup Parmesan Cheese grated
  • 3 cloves Garlic minced
  • 1-2 tablespoons Cajun Seasoning adjust to taste
For the Sausage
  • 12 ounces Smoked Sausage Andouille or spicy Italian recommended
  • 1 tablespoon Olive Oil for browning sausage
For Seasoning
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For Garnishing
  • 2 tablespoons Parsley chopped

Method
 

Cooking Steps
  1. Bring a large pot of salted water to a rolling boil. Add the spiral pasta and cook until al dente, about 8-10 minutes. Drain and set aside.
  2. In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add sliced smoked sausage and brown for 5-7 minutes.
  3. Add 2-3 minced garlic cloves to the skillet and sauté for 1-2 minutes until fragrant.
  4. Pour in 1 cup of heavy cream, stirring to combine. Let simmer for 2-3 minutes. Gradually mix in 1 cup of grated Parmesan cheese and 1-2 tablespoons of Cajun seasoning until the sauce is creamy.
  5. Add the drained pasta to the sauce, tossing to coat evenly. If too thick, add a splash of reserved pasta water.
  6. Serve the pasta in bowls, garnished with freshly chopped parsley.
