  • ½ medium cabbage shredded finely
  • 3 green onions chopped
  • 3 large eggs
  • 1 tablespoon Dijon mustard yellow mustard works as a substitute
  • 1 teaspoon salt
  • ½ teaspoon pepper
  • cup gluten-free flour or all-purpose flour if gluten-free is not a concern
  • 1 teaspoon baking powder omit if preferred
  • 3-4 tablespoons olive oil
  • ½ cup grated cheese (optional) cheddar or mozzarella
Creamy Dill Sauce
  • cup light sour cream
  • 2 tablespoons mayonnaise
  • 2 tablespoons chopped dill
  • salt & pepper to taste

Method
 

Preparation
  1. Finely shred half of a medium cabbage and chop three green onions, including both green tops and white bulbs.
  2. In a large mixing bowl, whisk together three large eggs, one tablespoon of Dijon mustard, one teaspoon of salt, and half a teaspoon of pepper until well blended.
  3. Pour the egg mixture over the cabbage and green onions and toss together thoroughly.
  4. Sprinkle in two-thirds of a cup of gluten-free flour and one teaspoon of baking powder, gently fold until fully combined.
  5. Heat three to four tablespoons of olive oil in a skillet over medium-low heat. Add the cabbage mixture, cover, and cook for about 15 minutes until golden-brown.
  6. To flip, place a plate over the skillet, invert the pie onto the plate, add more oil, and cook the other side uncovered for 10-15 minutes.
  7. Transfer the Cabbage Pie to a cutting board, cool slightly, and garnish with extra green onions or fresh dill before serving with creamy dill sauce.
