  • 1 tsp Cracked Black Pepper Coarsely ground.

  • 1/2 cup Dark Brown Sugar Or light brown sugar as an alternative.
  • 1/4 cup Dark Soy Sauce Use Tamari for gluten-free.
  • 1 tbsp Unsalted Butter Or olive oil for a dairy-free option.
For Serving
  • 1 cup Jasmine Rice Can substitute with basmati or quinoa.
  • 1 bunch Green Asparagus Can swap with green beans.
  • 2 tbsp Fresh Parsley For garnish.

Method
 

Step-by-Step Instructions
  1. Rinse jasmine rice under cold water until clear. Combine with water and salt in a pot, bring to a boil, cover, and simmer for 15 minutes.
  2. Preheat oven to 425°F (220°C). Trim asparagus, toss with olive oil, salt, and pepper, spread on baking sheet, and roast for 10-12 minutes.
  3. Pat salmon dry, season with salt and pepper. Heat skillet over medium-high, add oil. Sear salmon skin-side down for 4-5 minutes.
  4. Flip salmon, pour glaze of brown sugar, soy sauce, garlic, and pepper into pan with butter. Baste continuously for 2-3 minutes.
  5. Serve salmon over jasmine rice with roasted asparagus, garnish with parsley and extra pepper.
