Step-by-Step Instructions
  1. In a food processor, combine 1 cup of frozen peas, pea shoots, ⅓ cup of grated Parmesan cheese, juice of half a lemon, and half a clove of garlic. Blend until smooth yet slightly chunky. Set aside.
  2. Preheat your oven's broiler or set a grill to medium-high heat. Arrange sliced ciabatta on a baking sheet; drizzle with olive oil. Toast for 2-3 minutes on one side until golden, then flip and toast the other side. Rub with remaining garlic clove.
  3. Spread the pea topping over each toasted ciabatta slice. Sprinkle with additional Parmesan and lemon zest. Garnish with pea shoots and a drizzle of olive oil, followed by black pepper.
