  • 1 lb Shishito Peppers Fresh, firm peppers
  • 1-2 tbsp Canola Oil Can substitute with olive oil
  • 1/2-1 tsp Kosher Salt Adjust to taste
For the Dipping Sauce
  • 1 cup Greek Yogurt Can use dairy-free yogurt for vegan option
  • 1 tbsp Lemon Juice Can substitute with lime juice
  • 2 cloves Garlic Minced; fresh garlic recommended

Method
 

Preparation
  1. Mince or grate garlic and combine with lemon juice. Let rest for 10 minutes.
  2. Blend garlic mixture into Greek yogurt. Stir until fully combined.
  3. Preheat broiler and place a heavy skillet inside for 5 minutes.
  4. Toss shishito peppers in a mixing bowl with canola oil and kosher salt.
  5. Transfer coated peppers to the hot skillet and broil for 3 minutes without stirring.
  6. Gently stir peppers and continue broiling for 3-6 minutes until blistered.
  7. Remove from oven and transfer to a serving dish. Serve warm with dip.
