Method
 

Step-by-Step Instructions
  1. Heat 1 tablespoon of olive oil in a 12-inch skillet over medium-high heat for about 1-2 minutes.
  2. Add 1 pound of ground beef and break it into chunks. Let it sear undisturbed for about 3 minutes, then stir gently until fully cooked, about 3-4 minutes.
  3. Move the cooked beef to one side and add 1 medium diced yellow onion. Sauté until translucent, about 3 minutes.
  4. Stir in 3 minced garlic cloves, 1 teaspoon of smoked paprika, and 1 teaspoon of dried oregano. Cook for about 60 seconds until fragrant.
  5. Pour in ½ cup of beef broth, scraping up browned bits from the skillet. Simmer for 2-3 minutes.
  6. Add 2 cups of thawed mixed peas and carrots, and 1 cup of pre-cooked white rice. Mix well and simmer for 5 minutes.
  7. Remove from heat and sprinkle ½ cup of shredded cheddar cheese over the top. Cover for a minute to melt the cheese.
