For the Skewers
  • 1 lb Italian sausage Use chicken sausage for a lighter option.
  • 1 tablespoon Olive oil Can be substituted with avocado oil.
  • 1 cup Red bell pepper Substitute with yellow or orange for variety.
  • 1 cup Green bell pepper Can be replaced with zucchini or yellow squash.
  • 1 cup Fresh pineapple Substitute with chopped peaches for a twist.
  • 1 medium Red onion Yellow onion can be used instead.
  • 1/2 cup Barbecue sauce Use a sugar-free version for lower calories.

Method
 

Cooking Instructions
  1. Remove the casing from the Italian sausages, then mash into small meatballs, about 1 inch in size.
  2. Preheat your grill to medium-high heat, around 375°F to 400°F. Brush grill grates with about 1 tablespoon of olive oil.
  3. Thread sausage meatballs, chunks of red and green bell peppers, slices of red onion, and fresh pineapple onto skewers, alternating ingredients.
  4. Place the skewers on the preheated grill and grill for 8-10 minutes, turning occasionally.
  5. Brush the skewers with remaining BBQ sauce and cook for an additional 1-2 minutes.
  6. Remove skewers from the grill and serve hot on a platter.
