  • 2 tbsp Butter softened
For the Sauce
  • 2 tbsp Lemon Juice freshly squeezed
  • 1/4 cup White Wine optional
For Garnishing
  • 2 tbsp Parsley fresh, chopped

Step 1: Cook the Bacon
  1. Chop uncooked bacon into bite-sized pieces and cook in a large skillet over medium heat for 5-7 minutes until crispy.
Step 2: Prepare the Scallops

Step 3: Sear the Scallops
  1. In the skillet with bacon drippings, add olive oil and heat. Sear scallops for 3-4 minutes on each side.
Step 4: Make the Lemon Butter Sauce
  1. Add lemon juice and white wine to the skillet, deglaze, and whisk in softened butter until smooth.
Step 5: Combine the Ingredients
  1. Return bacon to the skillet and add seared scallops, gently tossing to coat in the sauce.
