Ingredients
  

For the Meatballs
  • 500 grams Ground Lamb or Beef/Pork
  • 1 cup Fresh Breadcrumbs use gluten-free for gluten-free option
  • 150 grams Chorizo or spicy sausage
  • 2 medium Shallots or onions
  • 2 cloves Garlic fresh
  • 1 large Egg or flax egg for vegan option
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Paprika
  • 1/2 teaspoon Black Pepper
  • 3 tablespoons Olive Oil for frying
For the Sauce
  • 800 grams Canned Chopped Tomatoes or whole tomatoes chopped
  • 150 ml Red Wine e.g., Rioja or broth for non-alcoholic
  • 250 ml Beef Stock or vegetable stock
  • 2 pieces Bay Leaves
  • 1 teaspoon Sugar
  • 1 piece Cinnamon Stick
For the Finish
  • 1/4 cup Fresh Parsley for garnish

Method
 

Step-by-Step Instructions
  1. Prepare fresh breadcrumbs by blitzing bread in a food processor. Set aside.
  2. In the processor, mince the chorizo, shallots, and garlic until finely chopped.
  3. In a mixing bowl, combine ground meat, breadcrumbs, chorizo mixture, egg, and seasonings.
  4. Shape mixture into balls the size of golf balls; yield around 45 meatballs.
  5. Brown meatballs in a skillet with olive oil for 4-5 minutes until golden.
  6. Sauté garlic and bay leaves in the same skillet until fragrant, then stir in other sauce ingredients.
  7. Add canned tomatoes and beef stock to the skillet; simmer before adding meatballs.
  8. Cover and cook meatballs in sauce for an additional 20 minutes until cooked through.
  9. Discard bay leaves and cinnamon stick; adjust seasonings and garnish with parsley before serving.
