  1. Start by gathering all your ingredients: fresh cilantro, mayonnaise, jalapeños, minced garlic, Cotija or Parmesan cheese, lime juice, and sea salt. Rinse the cilantro and jalapeños under cold water.
  2. In a food processor, add the prepared cilantro, mayonnaise, jalapeños, garlic, cheese, lime juice, and a pinch of sea salt. Process on high for about 30 seconds until thick and smooth.
  3. Once blended, taste the sauce and adjust by adding olive oil for creaminess or jalapeño seeds for heat. Pulse again for about 10 seconds.
